Einkorn waffles are a favorite around our kitchen any morning. These simple ingredients will make an easy einkorn waffle batter. It will taste good, and with its higher protein content, it will leave you satisfied after eating just one!

For years I have been making einkorn waffles for my family. When I was first learning to use this ancient grain there were not very many recipes available to learn from. Over time I have been able to modify recipes that called for regular flour and convert them into an einkorn version.

My kids love waffles so much – so creating a quick and simple recipe was necessary.

I certainly don’t have time for long recipes with four little kids, one of which is a baby! Plus, I wanted to be able to make them for breakfast more routinely. Along with our sweeter breakfast options of einkorn blueberry muffins, einkorn banana bread, einkorn pancakes (pumpkin option), and pumpkin coffee cake, this is just as filling and easy to make.

I have even doubled this and saved it in the fridge for up to three days when planning out busy weeks. You can also freeze them for times you know you will need them, such as preparing for postpartum. You can read about my postpartum care ideas here if you’d like.

How to Make Einkorn Waffles

When working with einkorn, it is best to weigh the einkorn flour. This is why all my einkorn recipes show measurements in grams.

This also eliminates more dirty dishes by pouring the ingredients directly into the bowl, instead of using measuring cups and spoons. However, in some of my recipes the ingredients are too small to weigh, so measuring spoons are necessary.

Ingredients

  • Butter
  • Milk – we love raw milk, but if that’s not an option for you try and get a high quality milk from the store
  • Eggs – we love local farm fresh, but again, if that’s not an option for you, invest in quality eggs for higher nutrition content
  • Vanilla
  • Einkorn all-purpose flour
  • Baking powder – non aluminum
  • Salt – you can omit if using salted butter

Steps for making Einkorn Waffles

Step one, you’ll need to warm the butter and milk. I don’t own a microwave, so I place the milk and butter in a bowl and pop it in the convection oven for 10 minutes at 250 degrees. However, you could use a microwave or heat them up on the stovetop in a small pot. Just be careful not to over heat them. The goal is to get the milk warm and the butter melted so that it can be quickly absorbed into the flour mix.

Next, you’ll mix the egg and vanilla with the warm milk and melted butter. Mix these until fully combined. I use my kitchenaid for this.

After your wet ingredients have been mixed together, add your einkorn flour. I used all purpose in this recipe, but if you’d like to use whole grain einkorn flour you would use 192g whole wheat einkorn flour instead of 240g all-purpose einkorn flour. Before turning on the mixer, make sure you add the baking soda.

Also, if you are not using salted butter, add 1tsp of salt at this point as well.

Now turn on your mixer and fully combine these ingredients. I mix on medium-low speed until fully combined, being careful not to overmix.

Once your batter is ready, scoop batter into your waffle maker and cook until yours beeps.

This recipe makes five fluffy, crispy, delicious einkorn waffles. They are very filling, however if you have a large family like mine, I highly recommend doubling or tripling this recipe!

Tips and Notes:

Now this ingredient is optional. I personally don’t add it when I am making waffles or pancakes, however I will recommend it if you prefer a more classic, sweeter tasting waffle. Add 1-2 tablespoons of sugar prior to mixing all the ingredients together.

The reason I omit this for my recipe is because after we top it with homemade whipped cream, fruit, and maple syrup, there is enough sweetness to make it taste exceptional. But if you are not adding all these toppings, I suggest adding the sugar to the batter. In fact, you can use any sweetener: white sugar, coconut sugar, you get the point.

Tips for freezing: If you’d like to freeze for later, I highly recommend placing square parchment paper between each waffle. This will help so that they don’t freeze together. When you’re ready to reheat, pop them in your toaster. I usually break them in half before freezing, since they are large, and toast half in each toaster slot.

Ingredients

  • ⅓ cup (76g) Butter melted
  • 1½ cup (375g) Milk warm
  • 2 Eggs
  • 1 tsp Vanilla
  • 2 cups (240g) Einkorn all-purpose flour
  • 4 tsp Baking powder aluminum free
  • 1 tsp Salt omit if using salted butter
  • 2 Tbsp Sugar optional

Instructions

  • In a bowl of a standing mixer, combine melted ⅓ cup (76g) Butter, warm 1½ cup (375g) Milk, 2 Eggs and 1 tsp Vanilla.

  • Next dump your 2 cups (240g) Einkorn all-purpose flour, 4 tsp Baking powder, 1 tsp Salt (if your butter is unsalted), and 2 Tbsp Sugar (I omit this ingredient, see the text above why I don't usually add it.)

  • Turning on your mixer to medium low speed, fully combine these ingredients.

  • Once your batter is ready, scoop batter into your waffle maker and cook until yours beeps.

  • We serve immediately and top with my Homemade Whipped Cream, fruit, peanut butter, and maple syrup!
